Applewood Smoked Pork Chops

This recipe is for making smoked pork chops on the grill.

Ingredients

  • 4 Pork Chops Bone-in or Boneless
  • 1/2 Cup Soy Sauce
  • 1/2 Cup Olive Oil
  • 2 tsp Minced Garlic
  • 2 Handfulls Apple Wood Chips

Instructions

  • Mix soy sauce, Olive Oil, and Garlic in a glass container large enough to fit all 4 pork chops.
    Marinated Smoked Pork Chops
  • Add pork chops to the marinade, allow to sit in the refrigerator for at least 2 hours, and not more than 24 hours.  Overnight is best.  Be sure all the pork chops are covered. 
  • Remove marinated pork chops from the refrigerator about 1 hour before cooking.  30 minutes is fine.  You don't want them sitting out too long for health's sake, but you don't want to grill cold pork chops.
  • Soak the apple wood chips in water for about 1 hour.  These can start soaking at about the same time you remove the pork chops from the fridge.

  • See smoker box or charcoal wood chips smoking instructions below. These are the wood chips I use.
  • Grill the pork chops until cooked through.  I prefer my pork chops done at about medium, 155 - 160 degrees.  This requires about 15 minutes, 7 minutes a side.  This is very dependent upon the size of the pork chops and heat of the grill.

This recipe is both simple and delicious. When using great ingredients, sometimes less is more.
